P-Chan's Sweet And Sour Pork

1 T. vegetable oil
1 1/2 lbs. Pork loin, cut into strips
1/2 c. water
1 lb. Can pineapple chunks in syrup
1 green pepper
1/4 c. brown sugar
2 T. cornstarch
1/4 c. cider vinegar
1 T. soy sauce

Brown pork strips in oil and add the water. Cover and simmer for 45 minutes
over low heat. Combine the brown sugar and cornstarch. Add the pineapple
syrup, vinegar and soy sauce. Mix well. Add to the pork and stir until
thickened. Add the pineapple chunks and green pepper strips. Cook for 2 or
3 more minutes. Serve over rice or noodles.
