Rei & Asukas Grandma's Beefstew

2 pounds boneless beef shin or chuck, cut into 1-inch cubes
3 tablespoons olive oil
2 cloves of garlic
4-5 carrots or a bag of baby carrots (cut into bite sized pieces)
5-7 large potatoes (cut into bite sized pieces)
1 green pepper
1-3 bay leaf
salt & pepper to taste
1 large onion

finally dice the garlic & about a1/4 of the onion, brown in a little olive oil till the onion starts to become see through, add the beef, brown the meat till all sides of meat are brown. It doesn't have to be cooked all the way through. It's easiest to do this in a large sturdy pot. add a little salt & pepper to flavor the meat, you can always add more lately. add about a cup of water in the pan so it just barely covers the mea. cover and let simmer for about 2 to 3 hours Chop the green pepper into 3/4 inch pieces, add to the meat. add the bay leaf, every 30 min or so check on the stew and make sure there is still water in there. after about an hour add the potatoes & carrots . make sure there is water to still cover all the potatoes, carrots & meat. continue to cook for an hour.
