Shinji's Oven Baked French Toast with
Blueberry Raspberry Maple syrup

OK all you gentlemen out there, get up early, and make something sweet for your honey on Valentine's day with this delicious recipe:

French toast:

Ingredients:
-16 slices firm white bread
-1/3 cup sugar
-1/2 teaspoon baking powder
-6 large eggs
-2 teaspoon vanilla
-1 1/2 teaspoon grated orange zest
-1 teaspoon cinnamon
-2 cups lowfat milk
-confectioner's sugar for dusting if desired

Instructions:
-grease a 9 x 13" baking pan
-arrange 6 whole bread slices in a single layer at the bottom of the pan
-cut remaining slices in half and arrange overlapping on top
-in mixing bowl, mix sugar and baking powder, then whisk in eggs, vanilla, orange zest, cinnamon until well blended
-gradually whisk in milk
-slowly pour over bread in pan, cover with saran wrap and weigh down with another casserole dish on top. refrigerate over night
-in the morning, bake uncovered at 375 30-40 minutes until puffed and golden, dust with sugar, serve with syrup

Syrup:

Ingredients:
-1 1/2 cup frozen blueberries
-1 1/4 maple syrup
-1/2 teaspoon cinnamon
-1 1/2 cup frozen raspberries

Instructions:
-in med. saucepan combine blueberries, syrup, and cinnamon
-cook over med. heat until syrup is almost boiling and berries are tender, about 5 minutes
-remove pan from heat, stir in raspberries
-cool to room temperature, then refrigerate
-rewarm before serving

For the syrup there are many different options, such as canned blueberry pie filling, cherry pie filling, frozen strawberries, etc.
