Ukyou Style Plain Okonomiyaki
For 2 Persons
(multiply accordingly) (small portion) Razor sharp spatulas 50g flour 50g cabbage (white or red, but red gives another taste!) 3 eggs 5cl water Soy Sauce Okonomiyaki Sauce
Use the edge of your spatulas to cut the cabbage in very small bits. Put oil on a frying pan, turn the heat on max. Mix the water and the flour until the whole has a good consistency, add the eggs and the cabbage. Add a few droplets Soy Sauce. If you've done all that in order, the oil should be barely starting to gresil, which comes in a very timely fashion. Put the batter on the frying pan, turn heat a little down. Let about 2-3 minutes, until the side on the frying pan turns into a light brown color. Add a few droplets Soy Sauce. Now get it on the other side. You can either use your spatulas again (be careful not to cut the frying pan in the process) or apply the same method as when you're making crêpes. Let it about 5 minutes. Et voilà! A very plain okonomiyaki. Once you've mastered that, it's up to you to add sliced meat (hint: slice hamburger in 5 stripes) or fruits or vegetables, whatever you want. Always add them to the batter and mix thoroughly. The finishing touch is the Okonomiyaki sauce, not always available alas. In that case, a good grill or barbecue sauce will do too. The use of salt and other spices is at your discretion.
